Fried Crappies

My husband loves to fish. It's one of the many other things he does as part of relaxing. He got a few more fishing gears yesterday, and went out this early Sunday morning to catch some fish. After two hours of siting by the lake he caught himself some crappies! Might not be much, but it means allot to him personally. He did the cleaning I did the cooking :-). There were eight small ones. Pretty delicious! Here goes the recipe :

8 small crappies (1 lb)
2 cloves garlic
1/4 onion
1/4 tsp salt
1 tsp sweet curry powder
1 tbs water
1 sprig thyme
2 cups of vegetable oil ( for deep frying )

Add the water, garlic, onion, salt, sweet curry powder, thyme and blend to make a soft paste. I use a magic bullet to do this. You can use any other method of blending you have available. The idea is to have a soft paste. Put the cleaned fish in a glass bowl and add the the paste to it. Cover the bowl and shake well. A plastic ziplock bag can also be used to do this. Set in the refrigerator for 30 minutes to marinade. Deep fry at a oil temperature of 360 degrees. I fried  in two batches of 4. Five to Six minutes per batch turning each fish half way though the frying in order to brown each side equally.

Enjoy!
